Catch up...

Ok... so I guess it's about time that I update this blog. The question is, where do I start?

This semester is flying by and there's only about a month until finals! That means I'm this much closer to graduation (hopefully in August), but I'm not quite sure I'm ready for finals yet. So, other than school, homework and grading papers, here's a little bit of what we've been up to lately.

Wednesday night was super busy, with class until 6:30 and then watching "Glory" for my American Heritage class at 7:30, so I didn't have much time to make my traditional St. Patrick's Day dinner. I was a little bit disappointed, since I am pretty much in love with corned beef. However, Thursday worked perfectly and Ben cooked the Corned Beef in the crock pot and I pulled out my cookbook from Dublin and made the very best, authentic Soda Bread and Colcannon. Yum!




Since baking my birthday cake, Ben has sort of adopted the Carrot Cake and he made another one a couple weeks ago. It was delightful, and seeing these pictures is making me want another one.



Ben's really becoming a chef these days. Not only is he cooking more, he even created his own recipe for a barbecued beef... and it's really good. :) I guess that's just what happens when you marry someone who loves to cook as much as I do.

On another note, Ben was in a pretty severe car accident about two weeks ago. He had a green light when a "16 year old redhead," as he puts it, failed to yield and turned left right in front of him. He turned into it at the last second and took the full force of the hit on the front left corner of the car. The car was totaled and he suffered 2nd degree burns on his hands as well as a messed up back and a small fracture on the edge of one of the vertebra in his neck. Thankfully, he's going to be fine. We were very lucky that the accident wasn't his fault and he was actually on the job when it happened and in a work van. That means that, if nothing else, Ben has paid leave from work as well as all of his medical expenses covered. Thank goodness!

These are his burns, about a week after the accident. The left hand and wrist looked a lot worse and was all red (you can still kind of see the line) when it happened, but has healed quite well. I'll post some more pictures later to show how well it's healing.

  1. My, that's gruesome. At least he's doing better. I have love for both of you, but mostly you. I don't think Ben will mind, will he?

  3. Wow, he really has been lucky! I'm glad he will turn out fine. BTW as you are finishing your studies - is there any chance for a semester in Austria and a visit to Germany? We would be so excited to meet you! Steffi & the Backes-family
